Americans live in the enviable reality that we can take our supply of affordable food for granted. But behind every apple we grab from the frig are a fleet of people, issues and complex decisions that got it there.
Quality of product and business profit have to be balanced against potential human health issues in areas like bio-engineered crops. And issues of government regulation of the ingredients in our food and escalating health care costs resulting directly from bad food choices we are making struggle against caveat emptor and the ideal the market place, where people are utterly free to put God-knows-what into their body (and live with the consequences).
